The Wi-Spy and Chanalyzer will show noise, and Frequency.  You can interpret what it means.  For starters here is a link to what the Topographic View is:

The clearest answer, is this:  

In your original post you asked how to get the noise level in inssider.  InSSIDer does not show the noise level, but Chanalyzer and Wi-Spy do.  They do it very well.  You can get the noise level in the Wi-Spy's Range.  Use the Inspector tool.  This will also give youthe Frequency points of the WLAN as well.

The RSSI, is the received signal strength indicator.  Because the Wi-Spy shows all RF activity, it will be graphed in Amplitude (dBm).  The stronger the signal, it will be higher in amplitude.

SNR, is signal to noise ratio. The Wi-Spy does not connect to a "signal" so it can not calculate the Signal to Noise Ratio.

However it can give you a grade of a Wi-Fi channel based on the noise in each channel.  That will be found in the Wi-Fi Report table. You may be able to calculate your own SNR by using the Wi-Fi report's noise floor, and your Wi-Fi's signal strength.
